بررسی عوامل موثر در نگرش مردم ایران نسبت به مفهوم "مرغ هورمونی"

<strong>مقدمه و هدف:</strong> درحالی که در هیچ کجای دنیا از هورمون به عنوان محرک رشد در پرورش طیور صنعتی استفاده نمی شود؛ اما حتی در کشورهای توسعه یافته نیز این باور وجود دارد که در دوره پرورش مرغهای گوشتی از هورمون استفاده می گردد. بقایای این هورمون ها در گوشت به عنوان مهمترین آلودگی گوشت مرغهای تجاری شناخته می شود؛ اما مهم ترین منبع آلودگی گوشت، باقی ماندن آنتی بیوتیک در گوشت مرغ است. در این راستا، هدف از پژوهش توصیفی حاضر بررسی سطح آگاهی مردم 29 شهر ایران در مورد سلامت محصولات غذایی با بررسی دیدگاه آن ها در مورد مرغ هورمونی بود. <strong>روش کار:</strong> در این مطالعه دیدگاه 3782 نفر از مردم شهرهای مختلف کشور بررسی گردید. بدین منظور علاوه بر مرغ هورمونی، آلودگی گوشت مرغ به آنتی بیوتیک و عرضه مرغ بدون بسته بندی به عنوان مهم ترین عوامل آلوده کننده گوشت مرغ مورد بررسی قرار گرفتند. بیشتر پاسخ دهندگان از شهرهای با جمعیت متوسط بودند و اغلب آن ها تحصیلات دانشگاهی داشتند. <strong>یافته ها: </strong>نتایج نشان داد که رسانه هایی مانند تلویزیون و رادیو در افزایش آگاهی مردم نسبت به سلامت محصول غذایی نقش چندانی ندارند. همچنین اغلب افرادی که گمان می کنند آگاهی کافی نسبت به سلامت محصولات غذایی دارند، در حقیقت آگاهی درستی نسبت به مفهوم مرغ هورمونی ندارند. شایان ذکر است که از بین پاسخ دهندگان تنها هفت نفر ( 19 / 0 درصد جمعیت) به وضوح بیان نمودند که مرغ هورمونی وجود ندارد.<strong> نتیجه گیری:</strong> به نظر می رسد که افزایش سطح درآمد، سطح تحصیلات و سن عواملی هستند که بر ارتقای آگاهی افراد نسبت به مرغ هورمونی و سلامت محصولات غذایی نقش دارند.
<div style="text-align: justify;"><strong>Introduction and purpose:</strong> Although hormones are not used in commercial chicken production in any part of the world, even in developed countries, it is believed that growth hormones are adopted during the rearing of broilers. The residuals of these hormones in chicken meat are considered as the most important contaminants of the commercial broiler meat. However, the most important resource of meat contamination is antibiotic residuals. Regarding this, the aim of the current study was to investigate the knowledge of people living in 29 cities of Iran about healthy food products through the evaluation of their insights about hormone-injected chickens. <strong>Methods:</strong> This research involved the investigation of the opinions of 3,782 individuals from different cities of Iran. To this end, in addition to hormoneinjection, chicken meat contamination with antibiotics and marketing of unpacked chicken meat were also investigated as other sources of chicken meat contamination. Most of the respondents were from moderate cities and had academic education. <strong>Results:</strong> The results revealed that media, such as TV and radio, play no significant role in the improvement of people’s knowledge about the food healthfulness. Moreover, most of the people thinking that they had enough knowledge about food healthfulness did not know anything about the hormone-injected chickens. Only 7 (0.19%) respondents clearly claimed that hormone-injected chickens do not exist. <strong>Conclusion: </strong>Based on the findings, enhanced income status, academic education, and age could be regarded as the factors playing a role in the improvement of people’s knowledge about hormone-injected chickens and food healthfulness.</div>
