fa بررسی غلظت باقیمانده‌ی بلانکیت در نبات تولیدی کارگا ه‌های نبا ت‌سازی شهر همدان بهداشت Health پژوهشي-کامل Research(Original) <p dir="RTL"><strong>مقدمه و هدف:</strong> نبات یکی از محصولات قندی پرمصرف در کشور ایران به شمار می رود. افزودن مواد&nbsp;شیمیایی به مواد غذایی درصورتی که نظارت و مدیریت کافی وجود نداشته باشد، می تواند تهدیدی جدی&nbsp;برای سلامتی انسان و محیط زیست باشد. در این مطالعه، مقادیر باقیماند‌ه ی بلانکیت در نبات تولیدی&nbsp;کارگا ه های نبا ت سازی شهر همدان مورد بررسی قرار گرفت.&nbsp;<strong>روش کار:</strong> پژوهش حاضر یک مطالعه توصیفی- تحلیلی با هدف تعیین میزان غلظت بلانکیت در نبات&nbsp;تولیدشده ی کارگا ههای شهر همدان در سال 1394 - 1393 می باشد. نمونه برداری به مدت 4 ماه در 20 کارگاه&nbsp;نبات سازی انجام شد. غلظت بلانکیت در آبنبا‌ت ها مطابق با روش مؤسسه ملی &nbsp;استاندارد ایران تعیین شد.&nbsp;داد ه ها با استفاده از نر م افزارهای SPSS 16 و Excel 2013 تجزیه و تحلیل شدند.&nbsp;<strong>یافته ها:</strong> نتایج این مطالعه نشان داد که در تمامی کارگاه های مورد مطالعه از بلانکیت به عنوان یک&nbsp;افزودنی در فراوری تولید نبات استفاده شده است و بالاترین و کمترین مقدار بلانکیت به ترتیب 85 / 23&nbsp;و 2/ 3 میلی گرم بر کیلوگرم بود. همچنین، نتایج نشان داد که در 5/ 37 درصد از کل نمونه های اخذشده،&nbsp;غلظت بلانکیت بیش از مقدار استاندارد بود. میانگین غلظت بلانکیت در نبات تولیدی در ماه های مختلف&nbsp;اسفند، فروردین، اردیبهشت و خرداد به ترتیب: 84 / 5&plusmn; 7/ 9، 7/ 3&plusmn; 49 / 9، 76 / 3&plusmn; 9 و 99 / 2&plusmn; 1/ 7 میلی گرم&nbsp;بر کیلوگرم بود که از نظر آماری اختلاف معنی داری را نشان داد.&nbsp;<strong>نتیجه گیری:</strong> نتایج این بررسی حاکی از بالابودن غلظت بلانکیت در نبات تولیدشده در اکثر کارگا ههای&nbsp;تولیدکننده بود که به نظر می‌ رسد، دلیل عمده آن بکارگیری خاک قند و ضایعات نبات در تهیه این&nbsp;محصول است که در این زمینه نظارت بیشتر و آموزش به متصدیان این کارگاه ها مورد نیاز می باشد.</p> <p style="text-align: justify;"><strong>Introduction and purpose:</strong> Rock candy is one of the most widely used sugar&nbsp;products in Iran. The use of chemical additives in food products can be a serious&nbsp;threat to human health and environment if it is not accompanied with sufficient&nbsp;monitoring and management. Regarding this, the present study was conducted&nbsp;with the aim of investigating the amount of sodium dithionite residue in the rock&nbsp;candies produced in the candy making plants of Hamadan, Iran.&nbsp;<strong>Methods:</strong> This descriptive and analytical study was conducted on the rock&nbsp;candies produced in all the active candy making plants of Hamadan in 2015.&nbsp;The sampling was performed for four months in 20 rock candy producing plants.&nbsp;The concentration of sodium dithionite residue was determined according to the&nbsp;guidelines released by the Institute of Standards and Industrial Research of Iran.&nbsp;Data analysis was performed using SPSS version 16 and Excel 2013 software.&nbsp;<strong>Results:</strong> According to the results, sodium dithionite was used as an additive in&nbsp;all rock candy making plants investigated in this study. The highest and lowest&nbsp;concentrations of sodium dithionite were 23.85 and 3.2 mg/kg, respectively.&nbsp;Furthermore, the results indicated that in over 37.5% of total sample size, sodium&nbsp;dithionite concentration was higher than the standard value.
